2 cups young coconut meat
2 cups young coconut water
1/2 cup cherry tomatoes
1 tsp red curry paste
1 garlic clove
1 knob ginger
1 tbs minced lemongrass
handful Thai basil
handful cilantro
2 to 3 sprigs mint
2 to 3 tbs lime juice
Puree in a high speed blender, add salt and pepper as needed.
